Disclaimer!! This is super crazy good and you WILL want more!
You will be looking for ways to use this on your food and in your recipes.
I made this to use with a specific recipe and I made a little extra to have on hand- and I am SO GLAD I did. No doubt that this will not go to waste!
You can put it on pizza or crumble on a big green salad. Mix it in with your scrambled eggs..try it on a sandwich or use it in lasagna like I did. So many things you can do with this! You can sweeten it up with some agave and put into a delicious breakfast crepe.
1 cup cashews soaked in 3 cups of water for at least an hour. *
*Soak for at least 1 hour. The longer you soak them the more creamy they become. You can soak them for up to 24 hours but do not soak longer than this.
- 2 teaspoons lemon juice
- ½ teaspoon salt
- Black pepper (a couple of shakes or 2 turns of your grinder)
- ¼ cup water
Note- I used RAW cashews, but roasted will work as well.
- Soak, drain and rinse cashews.
- Place in a food processor, along with lemon juice, salt and black pepper.
- Pulse for about 1 minute to combine ingredients
Add water and process until completely smooth, about 2-4 minutes.
YOU ARE DONE!! For REAL!! It is that simple. This is the base recipe- I added garlic to mine- and HOLY COW!! UNBELIEVABLE!!
Get creative and add some ingredients, chives, garlic…etc. This would be great on crackers, bagels…possibilities are endless.
