Fried Rice – one of my favorites when I eat Chinese Food!
Here is a new spin on it and it is completely friendly to your waistline!!
It’s been a while since I’ve made this dish- I forgot how absolutely delicious it is. I was inspired to make it again recently when this super fun video circulated on Facebook courtesy of Tasty.
While I did have a recipe similar somewhere in my files- I found myself searching through Facebook to find this little video again when I was ready to make it.
Ever done that- forget where you saw that awesome recipe and spend 30 minutes routing around the web trying to find it again?? TIME SUCK!!
I posted my pics as I was cooking and got a great response, so I figured I would write out the recipe for my clients and save them some valuable time. Since I was recording for my clients – I figured why not just throw it on the blog so that you guys can enjoy it too!? It’s a great one!!
NO RICE, Fried Rice
1 T sesame oil
1 T garlic
1 cup carrots chopped
1 cup celery (I added this for extra fiber)
1 cup peas
1 head of cauliflower – riced in food processor or grated
2 eggs –beaten
3 T low sodium soy sauce (I prefer Braggs Amino Acids)
Heat Sesame oil and garlic in a large skillet over medium heat
Add Beef/Chicken (I used cooked shrimp and added towards the end) cook for a 4 or 5 minutes
Add Carrots and Celery and saute for a 3-4 minutes
Add Cauliflower and Peas and saute for a few more minutes
Make a well in the center of the mixture and add the 2 beaten eggs to center
Scramble the eggs and cook thoroughly
Add a sprinkle of white pepper and Soy Sauce
Top with scallions (optional)
Eat and ENJOY!!
